Apple Cinnamon Energy Bites

I'm trying to think fall...and be excited for it.  I'm a summer girl so it's not really going to happen but treats can help.  Especially apple cinnamon ones.  I love that energy bites are super versatile and you can make them different each time.   When I made them this weekend, I added sunflower seeds and macadamia nuts rather than chia and walnuts.   I've also added pecans, almonds, dried fruit and whatever else I have.  Next time I might try the macadamia nuts and mini white chocolate chips.   


Anyways, for a quick and easy snack: 

Apple Cinnamon Energy Bites

Hands on time: 10 min 

Total Time: 10 min + 30 min chilling time 

Makes: 20 Bites

1 1/2 cups old fashioned oats 

3/4 cup natural peanut butter, creamy 

1-2 Granny Smith apples, grated 

1/2 cup walnuts or almonds, finely chopped

1/3 cup ground flax seed (or flax meal)

1/4-1/3 cup honey ( *less makes them drier, so you may need to add a tsp to a tbsp of water) 

2 tbsp chia seeds 

1/2 tsp vanilla extract 

1/2 tsp cinnamon (1 tsp for a more cinnamony taste) 

Stir all ingredients together in a bowl until completely combined.  

Cover and chill in the refrigerator for 30 minutes. 

Roll the mixture into 1 inch balls/Bites. 

Store in the refrigerator in an airtight container for up to 1 week.
